Here’s a recipe by Vonnie Edwards (also known as “Gran”) that’s found in one of our family cookbooks:
Petite Pizzas:
- 1 (8-oz) pkg. refrigerator biscuits
- 1/2 lb. Edwards’ smoked link sausage, cut in coins
- 2/3 c. spaghetti sauce or pizza sauce
- 2/3 mozzarella cheese
- 1 tsp. dried oregano
- Little basil
“You can microwave sausage coins slightly and drain. Roll biscuits into 3 to 5-inch circles on floured surface. You may want to make a rim by crimping edges to hold sauce in center. Place biscuits on greased baking sheet. Fill with favorite spaghetti sauce to which you have added a little basil and oregano; or pizza sauce to within 1/4 edge of biscuits. Lay coins of Edwards’ smoked link sausage on top. Sprinkle with cheese. Bake at 425 degrees to 10 to 12 minutes or until brown. Serve hot. I believe English muffins would nicely, though I have not tried.”
