Here at Edwards, we have come across an amazing revelation; today is National Pig Day!
A friend in the restaurant business who works with our wholesale department filled us in that today is the amazing holiday known as National Pig Day. According to Wikipedia, National Pig Day is a moment “to accord the pig its rightful, though generally unrecognized, place as one of man’s most intellectual and domesticated animals.”
The holiday began back in 1972 when Texas teacher Ellen Stanley and her sister Mary Lynne Rave decided to garner support for dedicating one day out of the year to recognize and be thankful for the delicious animal known as the pig. Although there is no evidence that this is truly a “National” day (which requires an act of Congress), there are several events in Kentucky, Illinois, New York and more that celebrate man’s best edible porcine friend.
Okay, call us a little bias but we want to commemorate this day to not just recognize the life of the pig, but also the wonderful bounties the pig gives us: ham, bacon sausage, salami, guanciali, and more bacon.
So here’s to the pig. May we honor such an essential animal with a celebratory holiday topped with salt and hickory smoke!
